TOWER HILL STABLES ANIMAL SANCTUARY

Tower Hill Stables Animal Sanctuary (THS) was founded in 1993 with a mission to provide care and a forever home to animals in need. The sanctuary was an enormous undertaking, something I could not possibly have envisioned those twenty-plus years ago when I started it. I had always rescued animals in a small and simple way, but when one of my horses had a terrible accident due to the negligence of a stable owner, I decided to create a home for the animals I loved. After that, frantic preparations began and the mammoth process of raising the necessary funds to buy land commenced. It was huge; it seemed insurmountable. We sold everything we possessed of any value, and somehow we did it. On the 5th December, 1996, my partner Martin and I moved to the sanctuary, with our family of animal friends. The next day, our injured horse Oscar came “home,” living happily for another four years, until old age eventually took him from us. Since that time, the sanctuary has just grown to over 600 animals spanning across 6 yards. Whether they be retired race horses, ex-fighting dogs, or neglected and abused farm animals, they all are given love, respect, medical care and a peaceful place to live at THS.

THE PHILOSOPHER’S CHEF TABLE – TEMPLE FOOD ACADEMY

Offering Korean Buddhist Temple Food Introduction and the Art of Compassionate Cooking Programs which including preparation classes and the philosophy behind the food, The Philosopher’s Chef Table strives to preserve the Korean Buddhist monastic tradition of plant-based food preparation and the philosophy behind it. Unlike China and Japan, in Korea, due to the policy of suppressing Buddhism and venerating Confucianism during the Joseon Dynasty (1392–1897), Buddhist monasteries had been settled predominantly in the deep-seated mountain areas where it is difficult to obtain fresh vegetables in the winter season. As a result, preserved and fermented foods as well as unique cooking aptitudes have been developed for self-sufficiency. With fresh and clean vegetables, it applies non-spicy and moderately stimulated cooking methods. Authentically, recipes have been developed to save and enhance the natural taste with a modest amount of seasoning. Above all, the emphasis is given to the attitude of respecting co-existence of all living things as well as cherishing food ingredients that are concerned with environment, climate change, and preservation of 1600-year old Buddhist heritage and culture

VEGAN SISTER CITY PROGRAM

The Vegan Sister City Program brings together vegans from different cities to promote veganism in a cross-cultural manner by encouraging restaurants, cafes and hotels to become vegan friendly helping them to create separate vegan menus and vegan friendly kitchens through service staff training and awareness on how to serve and prepare vegan food. The program is essentially an awareness, outreach and educational campaign that brings veganism directly to the doorsteps, tables and kitchens of restaurants, cafes and hotels encouraging them to become vegan friendly. The program also helps to offer more dining options for vegans and, as importantly, helps to introduce non-vegetarians through the vegan menus offered by more restaurants, to become aware of and have a chance to try vegan dishes. Supporting local vegan cooperation and bringing people together from different cities, countries and beliefs to mutually promote compassion and kindness in restaurant and hotel kitchens is what the Vegan Sister City Program is all about!
